- Dans la cuve d'un batteur muni du crochet, verser les liquides puis les ingrédients secs. Pétrir 3 min en 1èreV puis 5 min en 2èmeV. Filmer la cuve et faire pousser 1h à t° ambiante. Préchauffer le four à 220°C (chaleur convection) vers la fin de la pousse (mettre une lèchefrite dans le four et si possible une pierre à pizza ou des pierres réfractaires).
- Dégazer et diviser la pâte en trois pâtons puis boulez les. Faire détendre les pâtons pendant 10 min.
- Abaisser les pâtons en un cercle assez grand. Garnir avec le coulis de tomate, les oignons émincés, les tranches de bacon, le fromage et l'oeuf au plat (veillez à ce que rien ne se trouve au bord de la pizza). Plier la pizza en deux pour former un chausson. Bien souder les bords.
- Scarifier la calzone et enfourner la, jeter de l'eau dans le four (sur la lèchefrite) et cuire à 220°C pendant 10 à 15 min.
