Steps to make Briochettes:
- Mettre tous les ingrédients sauf le beurre et les raisins ou pépites de chocolat, dans un robot pétrin muni d' un crochet. - Pétrir 5mins, puis ajouter le beurre en dès et pétrir à nouveau pendant 15/20mins. - La pâte doit devenir lisse et très élastique. - Elle reste néanmoins collante, c'est normal, comme je le dis toujours, une bonne pâte à boulange doit toujours être très souple et un peu collante, sinon la mie sera sèche est cassante.
- Laisser lever 1h/1h30 à couvert - Farinez votre plan de travail, dégazez votre pâte, puis ajouter les raisins ou les pépites de chocolat.Divisez la pâte en 20 boules de 50gr chacune, ça va vous paraître petit mais elles vont bien gonfler !!
- Boulez vos petites boules puis mettez les sur une plaque garni de papier sulfurisé. - Laisser lever 1h, ça doit doubler. - Allumer votre four à 180°. - Badigeonner avec un oeuf battu additionné d'une càs de lait. - Enfourner de suite en jetant un petit verre d'eau au fond du four pour donner un coup de buée. - Cuisson 12/15mins à surveiller selon le four.
